I’m coming at you guys with a green smoothie. With avocado and spinach and other healthy things. In the middle of December. Are you rolling your eyes yet? Bear with me.

I know this time of year should be all about cookies and egg nog and fudge, but can we take a deep breath for a minute? A deep, reenergizing breath of green smoothie……. ahhhhhhhhh. 😌 Wooooooosa. See? Better already.

My diet has been nowhere near normal lately. We’re on our second trip to Indiana in 2 months – last month was to welcome my brother home from Malaysia and to spend time with my grandpa after his cancer diagnosis. This month we came home for my grandpa’s funeral. There has been a lot of grief eating. A lot of pizza. A lot of lasagna and pasta. A lot of cookies. And a lot of wine.

Needless to say, a green smoothie is most definitely in order after the whirlwind my tummy has experienced lately. This one is just the ticket.

During warmer months, I like a lighter, fruitier smoothie but this particular recipe has become my new stand-by lately. It’s easy to make, creamy and rich, and super filling. I just recently started adding avocado to smoothies and I LOVE it. It doesn’t throw off the flavor at all, plus it’s an extra boost of fiber, protein, and healthy fats to kick off the day.

Ingredients

2 cups fresh spinach
1 1/2 cups coconut milk – I used SoDelicious, regular unsweetened from a carton
1 cup frozen banana
1/2 of an avocado
1/2 inch piece of ginger, peeled
1/2 teaspoon spirulina powder
juice of 1 lime

Instructions

You know the drill! Add everything to the blender and blend until smooth!
