I love this recipe for its simplicity – it can be prepared ahead of time and popped into the oven when it’s party time. If you’re hosting, just start baking these a few minutes before guests start arriving. This appetizer can easily be changed up with different ingredients, depending on what you have in your kitchen. You could mix in sundried tomatoes, pesto, roasted red peppers, basil, spices, etc. to put a new spin on the flavor.

- 4 cups baby bella mushrooms
- 4 ounces goat cheese (chèvre)
- 3 cloves garlic, minced
- 1 teaspoon fresh thyme
- ½ teaspoon salt
- ½ teaspoon black pepper
- Preheat oven to 400º.
- Mix the goat cheese, seasonings, and garlic together in a medium bowl.
- Wash the mushrooms and remove the stems.
- Spray a foil-lined tray with oil and place the mushrooms open side up.
- Fill each mushroom with the goat cheese mixture.
- Place the tray in the oven and bake for 25 minutes.
- If desired, poke them with a toothpick for easy grazing.
