‘Tis the season for bubbly! And warm date nights in. And maybe a holiday brunch somewhere mixed in. Let’s talk cocktails, shall we?
Usually, I’m in a wine mood. Sometimes, I like a gin and tonic. And other times, I have no idea what I want.
Clark has always had an innate ability to make me the “right” drink. Somehow, he seems to know exactly what to make for me when I myself don’t even know. 😏 That’s a good quality to have in a hubby.
These cocktails came to life on a blustery November night just a few weeks ago. We finished up work for the day and we were debating whether or not to go out to dinner or cozy up and stay in. When you have a bottle of prosecco already chilled in the fridge (a pro-tip I learned from my mom 😉) and the snow starts to fly outside, staying in becomes the clear winner.
I started boiling pasta and Clark hopped on cocktail duty. Although I LOVE prosecco on its own, using it for cocktails is a good trick for making the bubbly go further. Another trick to date nighting? Keep a jar of this sun-dried tomato alfredo sauce on hand. Reheat and add to al dente pasta and you are set! Dinner and drinks are both on the table in 15 minutes or less. GOALS.

Pretty holiday cheese boards, seared seafood, creamy pastas, and even spicy dishes like Thai and Indian curry. So basically, all of the best food things.

- 1 Tablespoon lemon juice
- 2 Tablespoons ginger syrup
- 2 ounces gin
- 6-8 ounces Voveti prosecco
- Add ½ cup of ice to a cocktail shaker. Add lemon juice, ginger syrup, and gin to the shaker. Shake vigorously to chill.
- Divide the mixture evenly between two glasses. Pour in 6-8 ounces of champagne. Serve and enjoy!
