Parchment Pouch Fish with Fingerling Potatoes


2 – 6 oz. barramundi Filets
2 cups fingerling potatoes
2 cups fresh green beans
2 cloves of garlic
1 Tablespoon olive oil
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 medium lemon
thyme sprigs


Preheat oven to 375ยบ F.
Par boil the potatoes for 8-10 minutes in boiling water.
Arrange the green beans in the center of the parchment paper. Place the fish over the beans and sprinkle with salt, pepper, paprika. Add 2 lemon slices then top with 2 thyme sprigs.
Drizzle oil over everything.
Fold the sheet of parchment into a sealed packet.
Place on a baking sheet and bake for 15 minutes.
