Antioxidant Purple Smoothie

Sweet, simple, and superpowered – that’s what this smoothie is all about. With just 3 ingredients, this vibrant drink boosts your brain and immune system and fills you up!

INGREDIENTS

1 c. frozen blueberries
1 c. red cabbage
1/2 c. oat milk [or other non-dairy milk]

Blueberries – Everyone knows that this fruit is a powerhouse and rightly so. There is virtually no part of the body that blueberries don’t benefit. A serving contains 8 grams of fiber which regulates blood sugar and keeps you feeling full. The high levels of antioxidants in blueberries have been proven to boost brain function and improve memory. As an interesting side note, blueberries are one of the most important fruits to buy organic. Recent research has proven that organic berries boast more than twice the amount of antioxidants compared to non-organic.

Red cabbage – This brightly colored vegetable also brings a wide variety of benefits to the table. It’s loaded with Vitamins C, A, and K and a serving offers 2 grams of fiber. Its vivid color comes from the cancer-fighting antioxidant cyanidin. Red cabbage is a powerful anti-inflammatory and anti-bacterial food due to its other antioxidants, too.

Oat milk – This is a recent addition to our kitchen. We decided to try it because it’s one of the few non-dairy milks that doesn’t contain carageenan. For more info on carageenan, check out this article. It’s delicious — just sweet enough and not an overpowering flavor. It could easily be swapped out for another non-dairy milk.

  1. 1. Add all ingredients to a high-speed blender and blend until smooth. Enjoy!
