Sun-dried tomato chicken with brown rice and black beans

Last night we made a dish that we eat about once a week. It’s a great quick and easy meal that hits all of the necessary food groups and is great to heat back up in a skillet the next day (what’s a microwave?). You got your protein, fats, fiber, and carbs all in one! We like to make the rice and bean combo in our rice cooker.  It’s a simple rice cooker that was only about $25 at Walmart.  Just put the rice and beans in with some water and southwest seasoning (organic of course! No MSG!) into the rice cooker and 50 minutes later it’s done!

We love goat cheese in the Fitchen so we added some crumbled on top!
