Smoothie Saturday [Pea Shoots, Spinach, Grapes, Apple]

Grapes are one of nature’s most powerful antioxidants – high in Vitamin C, Vitamin K, among others. Potassium, magnesium, iron, calcium, and zinc are just a few of the other nutrients in grapes. The nutritional makeup of grapes is extremely beneficial for heart health and the circulatory system. The apple adds a bit of fiber to keep you feeling full and a bit more sweetness to round out the flavor.

1/2 c. pea shoots
1 c. spinach
1 c. seedless green grapes
1 c. cold water
1/2 apple [we used a Fuji]

Add everything to a blender and blend until smooth! 

Pea shoots are perfect for wraps, sushi, and burritos because of their sweet crunch. They have a slightly earthy flavor but the other ingredients tone it down just enough. A single serving of pea shoots contains more Vitamin C than an orange, not to mention a fair amount of fiber. They also regulate blood sugar and contain anti-inflammatory antioxidants and phytonutrients. Spinach boasts a slew of antioxidants, too, and in large amounts. The antioxidants are responsible for improving eye health, boosting immune system function, strengthening bones, and preventing cancer.

  • 1 c. spinach
  • 1 c. seedless green grapes
  • 1 c. cold water
  • 1/2 apple [diced]
