This sweet and spicy roasted cauliflower recipe is the perfect oven roasted side dish. Toss it on a sheet pan and it's ready in no time! It's vegan and gluten free, and it's great for adding to meal prep!

Sweet and Spicy Baked Cauliflower

I just spent two hours scouring reviews for baby bouncers on Amazon. My eyes ache.

Do you guys even know what kind of features these things come with nowadays? I don't know how I ever made it to adulthood without such luxuries.

Built-in sound systems, relaxing vibration patterns, an assortment of dangling toys to entertain the baby, hands-free bouncing – and none of them come in the color I want.

I have to get this right – it's a gift for my best friend's first baby. My best friend is pregnant. My best friend is having a baby. I still can't believe it.

I don't know the first thing about babies. I've never changed a diaper (Hello, Google? it's me, Jordan.)

I like love wine. I say shit and damn and hell sometimes too much. I know she's way more ready for baby H than I am. But it's still so hard for me to picture her as a mother.

I know that's just because I haven't ever seen her in this role before. I know she's going to be amazing.

It's hard to imagine. Because to me – playing house with our American Girl dolls seems like yesterday.

Getting in trouble for swimming in a flooded ditch seems like yesterday. Terrorizing the neighborhood in her go-cart seems like yesterday.

Her moving to Oklahoma seems like yesterday. Church camp. Boyfriends. High school. College. Graduations. Yesterday. Giving my first wedding speech as her Matron of Honor – I know that was just yesterday. I swear it was.

But here we are. Coincidentally, today is her birthday. And the next day is my birthday.

It's been so long since we celebrated together, even though we were born one day apart. Now, she's a couple of weeks away from bringing a piece of her into the world. And soon, I'll get to meet meet the magical little person she's been busy creating.

How lucky am I? I get to watch my best friend change and grow and learn. And she'll teach me things I didn't realize I needed to know.

She's going first. She's paving this road. And she's so got this. She's going to be so good at this. When Baby H comes into the world, she will be surrounded with love and gratitude. She will be supported. She will be encouraged. She will be raised by two of the best people I've ever known.

Sweet and Spicy Baked Cauliflower

I was having a hard time deciding what recipe to share before we leave to go camping over the weekend. But then I started thinking of the soon-to-be new parents and how pressed-for-time they will be.

This recipe is a game-changer and a life-saver. (Too many hyphens in one sentence? Nah.)

This sweet and spicy cauliflower is one of those recipes you can keep on hand, in the back of your mind.

When you see cauliflower on sale. When you have cauliflower that's on the verge of going bad. Or when you have a mixture of random vegetables in the fridge and you need a solution right now – this is the kind of recipe that saves your ass at hangry dinnertime.

We cooked this recipe on a heavy duty baking sheet lined with parchment – we order ours from Amazon! We've tried using aluminum foil before and it just doesn't seem to cook as well.

Description

Keep it simple with this oven-roasted side dish. Cauliflower florets are tossed in an irresistible sweet and spicy marinade and baked until tender.


Ingredients

Scale
  • 4 cups cauliflower florets
  • 2 Tablespoons maple syrup
  • 2 Tablespoon sriracha
  • 2 Tablespoons olive oil
  • ½ Tablespoon tamari or soy sauce
  • ½ teaspoon black pepper

Instructions

  1. Preheat oven to 400º. Line a baking sheet with parchment paper.
  2. In a large bowl (or a Ziplock bag) combine cauliflower and other ingredients – maple syrup, sriracha, olive oil, tamari, and pepper. Mix until the cauliflower is well coated.
  3. Pour the cauliflower onto the baking sheet and place in the oven. Be sure to give the cauliflower "room to breathe." If the baking sheet is over-crowded, the cauliflower will "steam" and it won't cook right. If you need to, divide it between 2 baking sheets.
  4. Bake for 30 minutes or until cauliflower is tender.

Notes

I recommend serving this over a bed of steaming quinoa or rice.
You can easily incorporate other vegetables with or instead of cauliflower.

    Sooo random but I didn't have sriracha or soy sauce or maple syrup so instead i used franks red hot, worcheshire and honey. tastes like a sweet chili sauce it was great.

    I made this dish for a New Year's Eve party, and everyone LOVED it! I didn't have Sriracha, so I used Chohula hot sauce, and it was plenty spicy. I also added a tsp of garlic powder and sprinkled on some panko for crunch. I'm making another batch today. Absolutely delicious.

    Waaaaaay too spicy. Far too much Sriracha. I'd do half as much. And I normally like spicy things but this is ridiculous sad to have wasted all this cauliflower. My 15 month old definitely cannot eat this ridiculously spicy thing.

    I wanted to give this a go before serving it to friends. so I cut the recipe in half and used half of a cauliflower. I don't like really spicy food, but this is a delicious sauce and the cauliflower tempers the spiciness of the sriracha. I found 30 minutes was too long for the size of my florets and they were cooked after 20 minutes. Also, I didn't turn over the cauliflower mid-point like I usually do when roasting veggies so the bottom parts were pretty caramelized but still tasted great! Thanks for a quick, easy and tasty recipe for a sauce I'll use on a lot of different veggies!

    I am not at all exaggerating when I say I could eat this entire thing and certainly suggest doubling the recipe if you plan to have more than two people eating the heaping portions we devour! My husband and I absolutely love this! A little spicy for our 3-year-old kiddo, but you could certainly tone down the amount of sriracha if you're in the same boat of not loving heat. Hubby and I do, so no adjustments for us. Thank you for a new "go-to" for cauliflower! Delicious!!

    I doubled the sauce except for the sriracha.
    Next time, I will double the sauce and half the original amount of the sriracha.
    Nonetheless a delicious dish.

    Made this today substitution the sriracha with another hot sauce. Omitted the black pepper. Flavor profile was spot on, but I would definitely change the process. Perhaps baking in a Pyrex dish for the first 20-25 minutes and then transferring to a sheet pan for 5-10 minutes.
    My results were on the dry side and would’ve preferred a little something saucier.

      Thanks for the feedback! I wonder what kind of effect the hot sauce substitution on the end result... With this recipe, the cauliflower is supposed to get a bit of crunch/caramelization in the process. The cauliflower absorbs most of the marinade so it's definitely not a "saucy" end result. Hope this helps!

    This never made it to a plate, we ate the whole cauliflower off the baking sheet. I’ve never loved cauliflower but holy cow I could eat this at every meal. The spicy balances the sweet very well! I’m curious to try it with different sriracha sauces (I used Blue Agave Sriracha by YellowBird Sauce). This will be a staple in my recipe book. Thank you!

    Fab!! Although next time I'll not add the marinade to the roasting pan, it was roasted but a bit 'soft'. And I used golden syrup as I didn't have maple syrup. I also used extra hot sauce as well as sriracha.

      Your extra liquids may have caused the cauliflower to be soft! Next time, try decreasing the overall amount of "wet" ingredients to keep it from getting soggy. :)

    If you add soy sauce it is not gluten free. My sister loved it but got sick after eating. Last time I made it minus the soy sauce & it was still yummy.

    It was just okay. I was hoping for more flavor. All I could taste was siracha. I was also hoping that the maple syrup would carmelize more, but that could have been my oven. We ate it, but it's not a recipe worth saving.

      Hmmm... I've never had that problem before. But, all ovens are different! I would suggest decreasing the oven temperature by 25º and see if that helps.

      I really want to try this. I'll put it on rotation. It might not be a bad idea to get a reliable oven thermometer for people having trouble with it not cooking right. Even new ovens sometimes aren't calibrated right, and old ovens are often wrong. It will help with all of your cooking and baking.

    This is my new favourite for roasted veggies! I used this sauce on everything - chicken, all my other roasted veggies, over rice... seriously, everything! I did find a little too much heat with the full amount of siracha, so I used 1/2 sweet chili sauce and 1/2 siracha. I also cut back on the olive oil just so it was a thicker sauce over the cauliflower. Seriously delicious and addictive!

    OMG! So yummy! On Weight Watchers and needed something different to do with cauliflower and this was definitely a hit. Can't wait to try with other veggies. Daughter is vegan and know she will love this as a steak. Used chili garlic sauce instead of the siracha and sugar free maple syrup. Might try as a marinade for chicken, salmon, etc. Can't go wrong.     My family has always balked at cauliflower - too bland. i fixed this and they loved it. i'm not a big fan of sriracha (too much heat) so my go-to sub for that is an Asian sweet chili sauce - and once again, it worked beautifully in this dish. a little bite of heat, but mostly mild and flavorful. Thank you for a great veggie dish to add to my rotation.

    I used to make something similar to this on the BBQ in foil packets for summer grilling...I have no idea why I never thought of just doing it in the oven lol. I did tweak it a bit - personally I can't stand sriracha (even the smell makes me gag for some reason) so after reading the comments I subbed balsamic instead. And because we have a gluten free family member now I used tamari sauce instead of soy. This was so simple to just toss together. And of course I had to taste test to make sure it would be up to Easter dinner quality lol. It's delicious! Thanks :)

      Yes, broccoli can be made the same way. It tends to cook slightly quicker than cauliflower, so just keep an eye on it!

    Love, love love this recipe, I have made it twice so far. So delicious! I reduced the sauce by half since it’s just two of us for dinner. Did not think about using it on other vegetables or meat, but will give it a try. I did reduce the oven temp to 400 and time to 20 minutes

    Made Sweet and Spicy Baked Cauliflower Jan 4, 2018. I like spicy food but did not have Sriracha in my pantry. I Googled a substitute and was given Balsamic Vinegar. I did have this. I used low-sodium soy sauce. I set a timer for 30 mins but smelled the start of burning at 25 so went ahead and pulled it out. The tips of the soft stalks were starting to burn. The veg was very good. I will make it again. Next time I will cut the stalks off mixing them with the florets instead. I will say the raw cauliflower with the marinade was also very tasty too. Thank you Jordan and Clark for this recipe!

        I was out of sriracha so I used cranberry chili sauce instead. Great recipe! Now Im gonna leave it in the oven for a while on 200, to see if i can get it to dehydrate, and get crunchy....

    Actually, because I live in Israel, I used date syrup instead of maple and Yemenite harisa instead of sriracha.
    Now I see I should've used at least 4 times less of that spicy end of my mouth (:

          I don't recommend using frozen cauliflower. Once it defrosts, it's super wet and it's difficult to get all that moisture out. Fresh cauliflower works best for this because it bakes up much better.

      Delicious just the way it is. Red-blooded, all American, meat-eating, Colorado girl. Why would you ruin ANYTHING by adding tofu? I have 1 vegan friend. Palest, weakest person I know. I tried it with a rare grilled ribeye. Substituted the cauliflower for the potatoes, but please, for God's sake, NEVER leave out the meat!

        There... is no meat in this recipe that is being left out. Tofu is fine. It's 2018. Your vegan friend isn't pale because they eat vegetables.

    We loved the cauliflower recipe! I had to Google what sriracha was, I've never heard of it, I guess you are not from the UK? I had some chilli dipping sauce which I used, it was fine. And I used golden syrup instead of maple syrup which is difficult to find and expensive here. I'll definitely be making new this dish again.

    hi! what can i use instead of sriracha? im not a big fan of spicy :/ i thought to just cut it out but i dont want the cauliflower to b flavorless :/ and about how much is 4 cups cauliflower? i read online that its around 400 grams? thanks :)

      Hi Sylvia –

      Instead of sriracha, you could try using barbecue sauce. I've never tried it, but it would certainly be milder in spice. 4 cups of cauliflower was about a whole, medium-sized head of cauliflower. From what I see online, that can range from 400-600 grams. The goal is to make sure all of the cauliflower has a nice, light coating of sauce.

          Lower quality EVOO's smoke point (when it burns) is around 320 degrees so that may be the issue! Try it with avocado oil or a higher quality EVOO?
