Brownie Energy Balls

Description

This brownie energy balls recipe tastes just like brownie batter! It's made with 5 simple ingredients and comes together in 10 minutes. Vegan, gluten free!


Ingredients

  • 1 cup medjool dates, pitted
  • 1/2 cup cashews
  • 2 Tablespoons cocoa powder
  • 2 Tablespoons mini chocolate chips (vegan, if desired)
  • 1 Tablespoon maple syrup or honey
  • 1 Tablespoon coconut milk (from carton, not can)
  • Pinch of sea salt
  • Matcha, optional for dusting

Instructions

  1. Add cashews to food processor and pulse until they're broken up into small bits. See below photo. Don't process too long – we don't want a flour consistency! Empty cashews into a large bowl and set aside.
  2. Add dates to the food processor and blend until they form into a big, sticky ball. This usually takes 20-30 seconds in my processor.
  3. Add the date paste to the bowl with cashews, then add chocolate chips, maple syrup, coconut milk, and a pinch of sea salt. Use your hands to mix it all together. Once everything is well-combined, scoop out small handfuls and roll them into balls. I like to make mine about 2 tablespoon-sized.
  4. If desired, sprinkle matcha onto finished energy balls.
  5. Store in the fridge for up to 2 weeks!
