Description
An easy, healthy rice and tofu dish spiced with green chiles. It all comes together in your rice cooker!
Ingredients

- 1 1/2 cups basmati rice
- 3 cups water or broth
- 1 cup pinto beans, canned, drained, and rinsed
- 14 oz. extra firm tofu, cut into 1" cubes
- 1 – 4 oz. can green chiles
- 1/3 cup diced onion
- 1/2 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne
Instructions
- Add all ingredients to the rice cooker and stir. Close the lid and press the "white rice button."
- Cook until the rice cooker switches from "cook" to "keep warm" mode.
- Serve and enjoy!
