Chile Verde Tofu and Rice

Description

An easy, healthy rice and tofu dish spiced with green chiles. It all comes together in your rice cooker!


Ingredients

Scale
  • 1 1/2 cups basmati rice
  • 3 cups water or broth
  • 1 cup pinto beans, canned, drained, and rinsed
  • 14 oz. extra firm tofu, cut into 1" cubes
  • 14 oz. can green chiles
  • 1/3 cup diced onion
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne

Instructions

  1. Add all ingredients to the rice cooker and stir. Close the lid and press the "white rice button."
  2. Cook until the rice cooker switches from "cook" to "keep warm" mode.
  3. Serve and enjoy!
