Chocolate Chip Zucchini Muffins

Description

Gluten-free chocolate chip zucchini muffins.


Ingredients

  • 1 1/2 c. gluten free flour
  • 1 c. grated zucchini
  • 1 c. chocolate chips
  • 1/3 c. olive oil
  • 1/2 c. raw honey
  • 1 tsp. vanilla extract
  • 1/4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 2 eggs
  • zest of 1 lemon

Instructions

  1. Preheat oen to 350º.
  2. Grease muffin pan or line pan with muffin cups/parchment paper.
  3. Mix together flour, baking powder, baking soda, salt, and cinnamon.
  4. Add in grated zucchini.
  5. Whisk eggs in a separate bowl. Add to flour along with honey, oil, vanilla, and lemon zest. Mix.
  6. Add in chocolate chips.
  7. Pour 1/4 cup of batter into each muffin cup.
  8. Bake for 20-22 minutes.
  9. Check for doneness using the "toothpick test". If nothing sticks, they're done. Enjoy!

Notes

If bottoms aren't quite baked fully, cover tops in foil and continue to bake while monitoring.
