Description

This vegan chili recipe is loaded with 3 kinds of beans, veggies, pasta, and aromatic spices. It chases away the chill on cold nights.


Ingredients

  • 1 - 15 oz. can black beans, drained
  • 1 - 15 oz. can pinto beans, drained
  • 1 - 15 oz. can white beans, drained
  • 1 - 15 oz. can corn, drained
  • 1 - 15 oz. can diced tomatoes, fire roasted
  • 1 cup macaroni
  • 1/4 cup green chiles, canned
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups broth
  • 3 oz. tomato paste
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1 teaspoon red pepper flakes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon cumin
  • 1 teaspoon black pepper
  • 1 Tablespoon sea salt
  • 1/4 teaspoon garlic powder
  • pinch of cayenne, to taste
  • 1/4 teaspoon onion powder

Instructions

  1. Add everything to the crockpot, except the macaroni. Stir to combine.
  2. Cook on high for 2 hours and add macaroni. Stir to combine and continue cooking 30-45 more minutes.
  3. Enjoy!
  4. When reheating, it helps to add a bit of broth.
