Cucumber and Onion Salad

Description

A crisp and refreshing side dish that's great for healthy snacking or grilling out.


Ingredients

  • 2 large cucumbers
  • 1 medium yellow onion
  • 1 cup white vinegar
  • 1/2 cup unsweetened coconut milk
  • 1/2 cup water
  • 1 Tablespoon cane sugar
  • 1 Tablespoon black pepper
  • 1 Tablespoon Sea Salt

Instructions

  1. Using a mandolin or knife, slice the cucumbers and onions into 1/8" slices. Place them in a large bowl.
  2. Add the remaining ingredients and toss together.
  3. Store in the refrigerator for up to 7 days.
