Double Chocolate Belgian Waffles

Description

Decadent, rich chocolate waffles, perfect for a sinful Sunday brunch.


Ingredients

  • 1/3 c. oat flour
  • 1/3 c. rice flour
  • 1/4 c. cocoa powder
  • 3 Tbsp. almond meal
  • 1/4 tsp. baking powder
  • 1/4 tsp. sea salt
  • 6 Tbsp. coconut oil
  • 1/3 c. sucanat
  • 2 eggs
  • 1 tsp. vanilla extract
  • 3 oz. chocolate chips
  • 1 Tbsp. chocolate syrup
  • 1 Tbsp. dark chocolate shavings [optional]
  • 1 Tbsp. powdered sugar [optional]

Instructions

  1. Whisk together oat flour, rice flour, cocoa powder, almond meal, baking powder, and salt until well-combined.
  2. Melt 3 oz. chocolate chips and 6 Tbsp. of coconut oil in a double boiler. Stir until melted and combined.
  3. Remove mixture from the heat and stir in sucanat.
  4. Turn on waffle iron and spray with olive oil.
  5. Stir in eggs to chocolate mixture. Add vanilla.
  6. Add chocolate mixture to flour mixture and stir until combined. Do not over stir.
  7. Spoon batter into waffle iron.
  8. Top with powdered sugar, shaved chocolate, chocolate syrup, whipped cream, berries, or whatever your heart desires.

Notes

This recipe makes 6 - 5 inch waffles.
