Grilled Polenta Bruschetta

Grilled Polenta Bruschetta - Summer food perfection! These make the best appetizer or hors d'oeuvre. Made with fresh tomatoes and basil!

This grilled polenta bruschetta recipe is simple summer food at its finest. Topped with fresh marinated tomatoes and chopped basil, this makes the perfect appetizer or snack.



1 lb. polenta (precooked, the kind that comes in a tube)
1 Tablespoon olive oil
1/2 teaspoon sea salt
1/2 teaspoon black pepper
2 cups cherry or grape tomatoes, sliced (preferably juicy summer heirlooms)
2 Tablespoons fresh basil, minced
1 Tablespoon olive oil
1 Tablespoon balsamic vinegar
1/4 teaspoon sea salt
1/4 teaspoon black pepper


Remove polenta from the packaging and slice into rounds about 1/2″ thick. Brush lightly with oil and sprinkle with salt and pepper.
Preheat the grill to high heat.
Place polenta slices on the grates and grill for 8 minutes per side.
While polenta is grilling, make your tomato topping! Combine tomatoes, basil, olive oil, balsamic, sea salt, and pepper in a small bowl. Mix together and set aside to marinate.
Remove polenta slices from the grill and spoon bruschetta topping over top. If desired, garnish with another dose of fresh basil.
