Parchment Pouch Fish with Fingerling Potatoes


Ingredients

Scale

2 - 6 oz. barramundi filets
2 cups fingerling potatoes
2 cups fresh green beans
2 cloves of garlic
1 Tablespoon olive oil
1/2 teaspoon sea salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 medium lemon
thyme sprigs


Instructions

  1. Preheat oven to 375º F.
  2. Par boil the potatoes for 8-10 minutes in boiling water.
  3. Arrange the green beans in the center of the parchment paper. Place the fish over the beans and sprinkle with salt, pepper, and paprika. Arrange the potatoes around the fish. Then top fish with 2 lemon slices and 2 thyme sprigs each.
  4. Drizzle oil over everything. Fold the sheet of parchment into a sealed packet. Place the packets onto a baking sheet and bake for 15 minutes.
  5. Remove from oven, carefully open the parchment pouches, then serve and enjoy!
