This watermelon popsicle recipe is juicy, sweet, and easy to make. The chocolate dipped coating is optional, but recommended!


  • 32 ounces fresh watermelon, cubed
  • 1/2 cup coconut water
  • 2 Tablespoons maple syrup or honey
  • 1 cup chocolate chips
  • sea salt


  1. Puree watermelon and honey together in a blender until smooth.
  2. Pour into popsicle molds and freeze overnight, or at least 6 hours.
  3. Melt chocolate.
  4. Remove popsicles and quickly dip in the chocolate. Or drizzle chocolate over popsicles!
  5. Sprinkle with sea salt. Enjoy!
  6. Or – return to freezer for later enjoyment!
