Spicy Sweet Potato Burgers

Ingredients

  • 1 1⁄2 cups cooked quinoa
  • 1 1⁄4 cup cooked sweet potato
  • 1 tablespoon olive oil
  • 1-2 tablespoons brown rice flour
  • 1/2 teaspoon sea salt
  • 1⁄2 teaspoon pepper
  • 1/2 teaspoon chipotle powder
  • 1/2 teaspoon red pepper flakes
  • 1⁄2 teaspoon garlic powder
  • 1⁄2 teaspoon chili powder
  • 1⁄4 teaspoon cayenne

Instructions

  1. Preheat oven to 400º and line a baking sheet with parchment.
  2. Peel sweet potatoes and chop them in half. Place on baking sheet with the cut-sides down. Brush generously with oil and season with salt and pepper. Roast for 45 minutes, or until fork tender.
  3. While the sweet potatoes are roasting, cook the quinoa.
  4. Once sweet potatoes are fork tender, remove from the oven and reduce the oven temperature to 350º. Place sweet potatoes in a large bowl with quinoa and mash together using a fork.
  5. Add seasonings and flour and mix well. Start with 1 Tablespoon of brown rice flour. If the mixture is too sticky, add another.
  6. Once the mixture has cooled, form it into 4 patties and place on a parchment-lined baking sheet (you can re-use the same one!) Bake for 45-50 minutes, flipping halfway.
