Ingredients
- 1 cup bulgur cooked in 2 ½ cups water
- 4 spring onions, diced
- 2 tomatoes, diced into cubes
- ½ english cucumber, diced into cubes
- 2 bunches parsley, diced into fine pieces
- 1 teaspoon dried mint
- Juice of 1 lemon
- ⅓ cup extra virgin olive oil
- Salt and pepper to taste
Instructions

Cook the bulgur in boiling water in a saucepan over medium heat.

Let it cool completely and stir in the diced tomatoes, cucumber, dried mint, spring onion, and parsley.

Pour in the olive oil and juice of the lemon and season with salt and pepper to taste.
