Blueberry Granola Pancakes

Description

These wholesome, gluten-free pancakes are loaded with juicy blueberries and bites of soft-baked whole grain granola.


Ingredients

Scale
  • 1 cup oat flour
  • 1/2 cup Van's Simply Delicious Blueberry Walnut granola
  • 1 ripe banana, mashed
  • 1/3 cup dried blueberries
  • 1 Tablespoon ground flax
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • pinch of sea salt
  • oil for griddle or skillet
  • fresh berries for topping
  • maple syrup for topping

Instructions

Prep

  1. In a large bowl, mash banana thoroughly. Add all ingredient: oat flour, granola, blueberries, flax, baking powder, vanilla extract, and sea salt. Use a fork to mix thoroughly.

Cooking

  1. If using a griddle – heat the surface to 350º and lightly coat with cooking spray. Use a 1/3 measuring cup to scoop batter onto the surface. Cook 1 1/2 minutes per side.
  2. If using a skillet – heat 2 tablespoons of oil over medium-high heat. Use a 1/3 measuring cup to scoop batter onto the surface. Cook 1 1/2 minutes per side, carefully monitoring to prevent burning. If cooking in batches, it may be necessary to remove the skillet from the heat and allow to cool somewhat between batches.
  3. Serve immediately, with fresh berries, maple syrup, and maybe a light dusting of powdered sugar. ;)

Notes

This recipe makes 6 large, 1/3 cup sized pancakes.
