This carrot cake oatmeal smoothie recipe is made with 6 simple ingredients. It provides a whole serving of veggies, plus fiber and protein. Perfect for breakfast, as a pre-workout, or as a post-workout!

1 1/2 cups coconut milk beverage (I use SoDelicious regular flavor)
1 cup boiled carrots (*see notes)
1/2 cup frozen banana
1/2 cup rolled oats
1/4 cup dates, pitted
1/2 teaspoon cinnamon
maple syrup for added sweetness
Add all ingredients to a blender and blend until well combined. I usually have to process twice to get the perfect smooth consistency.
*I like to boil carrots ahead of time and refrigerate for when I need them. They can also be frozen – but, if you use frozen carrot, I recommend using thawed bananas or adding more coconut milk.
