Description

This chili is a savory medley of veggies, beans, and rice that comes together in one crockpot.


Ingredients

Scale
  • 2 medium sweet potatoes, chopped
  • 1 cup wild rice
  • 1 can chickpeas, drained and rinsed
  • 1 can diced, fire roasted tomatoes
  • 1 yellow onion, diced
  • 4 cloves of garlic, minced
  • 3 cups vegetable broth
  • 2 Tablespoons curry powder
  • 1/4 teaspoon cayenne
  • 1 teaspoon chili flakes
  • 1 teaspoon sea salt
  • 1 bay leaf
  • olive oil cooking spray

Instructions

  1. Spray crockpot with olive oil or cooking spray.
  2. Add sweet potatoes, rice, chickpeas, tomatoes, onion, garlic, broth, curry powder, cayenne, chili flakes, salt, and bay leaf.
  3. Stir the ingredients to mix well.
  4. Cook on low for 3-4 hours until sweet potatoes are tender and rice is cooked.
