Herbed Goat Cheese Stuffed Mushrooms

Description

Stuffed with goat cheese and herbs, these easy stuffed mushrooms make a great side, finger-food, or appetizer.


Ingredients

  • 4 cups baby bella mushrooms
  • 4 ounces goat cheese (chèvre)
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 400º.
  2. Mix the goat cheese, seasonings, and garlic together in a medium bowl.
  3. Wash the mushrooms and remove the stems.
  4. Spray a foil-lined tray with oil and place the mushrooms open side up.
  5. Fill each mushroom with the goat cheese mixture.
  6. Place the tray in the oven and bake for 25 minutes.
  7. If desired, poke them with a toothpick for easy grazing.
