Description
Stuffed with goat cheese and herbs, these easy stuffed mushrooms make a great side, finger-food, or appetizer.

- 4 cups baby bella mushrooms
- 4 ounces goat cheese (chèvre)
- 3 cloves garlic, minced
- 1 teaspoon fresh thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat oven to 400º.
- Mix the goat cheese, seasonings, and garlic together in a medium bowl.
- Wash the mushrooms and remove the stems.
- Spray a foil-lined tray with oil and place the mushrooms open side up.
- Fill each mushroom with the goat cheese mixture.
- Place the tray in the oven and bake for 25 minutes.
- If desired, poke them with a toothpick for easy grazing.
