Watermelon Lime Daiquiri

When life hands you leftover watermelon [from our Cucumber-Watermelon Sammies] there’s only one thing to do. Add lime, rum, and enjoy.


1 1/2 oz. gold rum
1 oz. fresh squeezed lime juice
8 oz. blended watermelon

Juice 4 limes and set the juice aside. Remove the seeds and rind from the watermelon and chop the fruit into chunks. Add it to a blender and blend until it becomes a thick liquid.

Watermelon Lime Daiquiri

In a 16 oz. glass, add about ½ cup of ice. Pour in 1 1/2 ounces of rum. Add 1 ounce of lime juice, then fill the glass with watermelon juice. Stir gently with a swizzle and garnish with watermelon rind or a slice of watermelon or lime.

Though this technically qualifies as a fruity drink, it’s not overwhelmingly so. The watermelon is just sweet enough and the lime adds a nice tartness. The rum comes through just enough to remind you what you’re drinking. It’s summer refreshment at it’s best.
