Grilled Zucchini Tomato Kebabs. Yep, that's right. Another grilled recipe, after I just shared those ratatouille kebabs. Are you mad about it? Good. 'Cause I'm sure not. We're in full grilling mode over here and there's no turning back.
These kebabs are a bit fancier than their ratatouille friends from the other day. Because we have thin slivers of zucchini doing a cool swirly back-and-forth thing to wrap up the tomatoes. Looks sophisticated, requires very little effort, and zero cleanup. This is the kind of food that summer is all about. Feeling ambitious? Make a double batch of these so you have some leftover to eat for lunch tomorrow. Yeah, that's right. We're talking GRILLED meal prep.
If you're having a Fourth of July shindig, these kebabs will be a major hit. I'm not sure about where you live, but our tomatoes are next level good right now in Colorado. My zucchini plant isn't quite on board yet, but that's what the farmer's market is for. 💁 I have a feeling it's going to wait until the day we leave for Mexico to start shooting out ripe dukes left and right. Oh well, that's a chance I'm willing to take.

This grilled zucchini tomato kebabs recipe looks fancy enough to serve at a party but it's so easy to assemble! Drizzle with pesto for extra summer oomph!
Ingredients
- 3-4 medium zucchinis
- 10 ounces cherry or grape tomatoes
- Olive oil
Instructions
- If using bamboo skewers, get them soaking in water to prevent burning.
- Chop off the ends of your zucchinis. Using a mandolin, slice zucchini very thin. Slide the end of the zucchini slice onto the skewer and add a tomato. Fold the zucchini back onto the skewer over the tomato. Add another tomato and repeat the process. When you run out of zucchini, add another slice and continue.
- Heat the grill to high. Spritz the kebabs with oil and place onto the grate. Cook 20 minutes, rotating every 5 minutes. Spray lightly with oil each time you rotate.
- Remove from grill and enjoy!
