Simple and refreshing orange berry smoothie, perfect for a spring day.
The sun is shining, the grass is turning green, and I hear birds chirping. People, I think this is for real. Spring is finally here. I don't know how you guys are feeling, but I am overjoyed.
Also – Clark is coming home this week. [!!!] Are you as excited as I am? It's been a looooooooong 32 days without him, y'all.
Luckily, I've had signs of spring to cheer me up and I've stayed plenty busy with a visit to Nashville and starting our summer garden. Warmer days and being outdoors has me craving lighter foods with less cooking and maximum freshness. I've been drinking a lot of smoothies lately, especially for breakfast. It's such a great way to treat your body first thing in the morning – giving it a dose of healthy fruits and greens gets the gears going in the right direction. After that, eating healthy the rest of the day is a piece of cake. Not literally cake... but you know what I mean.
I find that when I start off on the right foot, the rest of the day follows suit. I don't feel like ruining the good thing that I got started at 8am, or noon, or whenever it is that I roll out of bed.
Whether you've been eating healthy all winter long or you're just now dragging out your blender, put this smoothie recipe on your to-make list. It's plenty sweet with just a hint of tartness from the orange and you won't even know there's spinach in your cup.
Bikini season is right around the corner. Swapping out your breakfast bagel for this nutrition-packed meal-in-a-glass is going to get you pool ready in no time. And after spending the past 5-ish months in forced indoor captivity, I can think of nothing I'd like more.
