This vegan broccoli salad recipe with apples, almonds, and raisins is so easy! Just 7 ingredients and 3 steps to create this guaranteed crowd pleaser.

Whether you binged on mini-Snickers when you got the drunchies at last night's party or stayed at home to lounge in your favorite sweatshirt with an oversized bowl of popcorn – I think everyone can appreciate a fresh and green broccoli salad this morning.

As for Clark and I, we weren't out late partying but we were up late hosting the party at the bowling alley. The party which, unfortunately, ended early due to a power outage that spanned 2 counties. My costume was a last-minute burglar get-up and Clark wore the infamous mask from "V for Vendetta." Three cheers for indifferent conspiracy theorists!

We waited a while for the power to come back on, but when we realized it wouldn't be restored anytime soon, we packed it up and headed home to work on this post. The job of a food blogger is never done! But alas, I knew everyone would be craving healthy food today, so I saw no reason to hold out on you.

The most important component of this salad is, without a doubt, the golden raisins. Regular raisins will not cut it for this recipe. Golden ones are the key. They have a lighter flavor than regular raisins, and they have a hint of honey flavor. When combined with tart slivers of crisp granny smith apple, golden raisins add a balanced sweetness to round the salad out.

Dried Fruit in Bowl Broccoli

This salad is beyond easy and comes together in under 10 minutes. All you need is 7 ingredients – most of which are things you probably already have in your kitchen and the rest can easily be picked up at any grocery store.

It's a great dish to keep in the fridge for a healthy snack and it's also delicious way to add color and flavor to some of those upcoming holiday meals.

Description

A healthy and easy broccoli salad with the perfect mixture of sweet, tart, and tang.


Ingredients

Scale
  • 2 cups broccoli
  • ¾ cup vegannaise
  • ⅓ cup slivered granny smith apples
  • ⅓ cup regular coconut milk [carton, not canned]
  • ¼ cup golden raisins
  • ¼ cup chopped almonds
  • 2 Tablespoons ranch mix*

Instructions

  1. Trim broccoli into small pieces and cut slivers of the apple.
  2. In a medium bowl, combine the vegannaise, coconut milk, and ranch mix.
  3. Add all other ingredients to the mixture and mix until fully combined

Notes

    The ranch mix has milk ingredients!!! This is not a vegan recipe :(

      Thanks for noticing that! I will recommend using another brand or homemade version of ranch mix. Here's a recipe from Vegan Richa that would work. http://www.veganricha.com/recipe-pages/dry-ranch-mix-recipe

    Do you make your own ranch mix or use a packaged kind? I don't know if the packaged kind has msg or anything else that's icky--I don't have any on hand.

      For this recipe, we used store-bought. I didn't have all of the ingredients to make it myself, so I went the easy route! Simply Organic is a safe choice – no MSG or other BS involved.

    what is 'ranch mix' ?

      It comes in a packet from the grocery store and it's a mixture of seasonings that you use to create ranch dip. You can make your own at home, but for this recipe we just used Simply Organic's ranch mix.
