Hello, hi, SPRING – you beautiful, wonderful thing!

True to Colorado form, this season is blowing in like a lion. And by that, I mean we had 40mph winds yesterday. Just some casual hurricane force gusts – no biggie. 😂 But I am NOT complaining. Because these winds are accompanied with 70 degrees and sunshine.

Bring. On. The. Spring. And all of my favorite things. Camping and grilling out and playing with Scout in the backyard. Vibrant, veggie-centric meals like these chickpea naan wraps. And PICNICS. My all-time favorite date. I'll take fresh air and a bottle of wine over a fancy restaurant dinner any day. ☀

I have one rule when it comes to picnics: keep it simple. I am not bringing an entire charcuterie board to this situation. I am not bringing anything that requires spreading, assembling, or cleanup. It's all about easy, handheld, and delicious. For example... these WRAPS. Fresh, colorful chickpea wraps stuffed with all of my favorite textures and flavors, mediterranean chickpea naan wraps, amazing!

The best part? I'm 100% certain (after plenty of hands-on research) that these wraps pair perfectly with chilled rosé and warm spring days. 😘 Are you feeling this as much as I am? That's what I thought.

Mediterranean Chickpea Naan Wraps Picnic

SO first things first, we get the wine chilling. We opted for Decoy's lovely dry rosé because I knew it would pair perfectly with our light picnic meal. Pick up everything you need for these chickpea wraps at the grocery + your favorite fruits and other snacks. Then, on picnic day, we quickly cook the chickpeas. Next, we slather hummus on a piece of naan, pour in the chickpeas and then load up the veggies – tomatoes, cucumber, romaine, and red onion. Finally, we gently fold it in half and wrap it snugly in the parchment. Pack everything into a little cooler and hit the road.

That's exactly the process we followed to get ready for our date last weekend. And then we hit a dead end. I had my heart set on having a picnic by a beautiful reservoir just outside of Woodland Park. But I didn't even think about checking to see if it was open for the season yet. Total amateur move. Total bummer. So here we are, sitting in front of a "Do Not Enter" gate. The car is loaded up with picnic essentials, Scout is anticipating a fun outing, and we're ready to unwind with that perfectly chilled bottle of Decoy rosé. I'm not one to take no for an answer – so we changed plans and found the next best things. (Luckily we had a few go-to spots that we could fall back on.)

We threw down the blanket, laid out our meal, and opened up the wine... and BOOM. An average weekday picnic was immediately elevated – just like that, we were transported to Sonoma. See? Picnics are THE BEST.

Description

This Mediterranean chickpea naan wrap recipe is loaded up with spiced chickpeas, hummus, and a rainbow of crunchy, fresh vegetables. These vegan wraps are great for lunch, dinner, meal prep, and picnics!


Ingredients

Scale
  • 2 naan wraps
  • 1 - 15 oz. can chickpeas, drained and rinsed, then dried
  • 2 teaspoons olive oil
  • 2 teaspoons lemon juice
  • ½ Tablespoon nutritional yeast (optional, but I like the savory flavor)
  • ½ teaspoon sea salt
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper
  • ½ cup romaine, chopped
  • 2 roma tomatoes, sliced
  • ¼ cup red onion, thinly sliced
  • ¼ cup cucumber, chopped
  • ¼ cup hummus, (more or less as desired)

Instructions

  1. In a large skillet, bring 2 teaspoons of olive oil to medium. Add chickpeas, seasonings, and lemon juice. Sauté 8-10 minutes until heated.
  2. Warm naan wraps in the oven until they're pliable (most brands have directions on the packaging), then remove and place each on an individual, large piece of parchment paper. Spread hummus onto the wraps – I like to spread a generous amount all on one half of the wrap for easier folding. Then spoon chickpeas onto the hummus, dividing evenly between the two wraps.
  3. Top with desired veggies, then fold the naan in half and wrap in parchment. Stow them away in your picnic basket or cooler until you're ready to roll!

*Veggie toppings are suggested, loose quantities. Add as much or as little as you desire!
