Sunflower Seed Veggie Burgers

These Sunflower Seed Veggie Burgers are perfect for any time of day and ideal for meal prep. Just 5 ingredients, quick prep, and easy cleanup!

Sunflower Seed Veggie Burgers

Helloooooooo perfect sunflower seed veggie burgers! I know there are approximately one billion different ways to make veggie burgers and there so many different types – black bean, sweet potato, chickpea, eggplant, etc. But my favorite of all? These sunflower seed burgers!

A lot of veggie burgers lack crunch or substance when you bite into them. These burgers are different. They're slightly crispy on the outside, and perfectly soft and dense on the inside. And best of all? They're EASY.

How to Make Sunflower Seed Veggie Burgers:

  1. First things first – cook your brown rice. I use our Instant Pot for rice to speed up the process.
  2. While that's cooking, food process your sunflower seeds until they're coarsely ground (see photo below). Remove from food processor and set aside.
  3. Food process your carrots until they're roughly chopped.
  4. In a large bowl, combine sunflower seeds, carrots, and remaining ingredients. Mix until fully combined.
  5. Use your hands to shape the mixture into patties – it should make about 6 burgers. Place them onto a baking sheet and bake.

That's it! Just a few simple steps and you have 6 sunflower seed veggie burgers ready to be devoured. Which brings me to my next point: allllllll of the glorious ways to eat these!

You can go traditional and slap the burger on a bun – I recommend crunchy sprouts and lots of avocado. You can go lower carb and wrap the burger up in lettuce – avocado is also a good addition here. You can top the burger with a yolky fried egg and serve it up for breakfast – again, is avocado ever a bad topping?

Ingredients

Scale
  • ½ cup uncooked brown rice
  • 1 cup water
  • 1 cup sunflower seeds
  • ½ cup grated carrots
  • ½ teaspoon sea salt
  • 2 garlic cloves, minced
  • olive oil*

 


Instructions

  1. Cook your brown rice – I used the Instant Pot to speed things up. Preheat the oven to 400º and line a baking sheet with parchment.
  2. Food process your sunflower seeds until they're coarsely ground (see photo below). Remove from food processor and set aside. Grate your carrots.
  3. In the food processor, combine pulsed sunflower seeds, grated carrots, and remaining ingredients. Pulse until fully combined. If the mixture is a bit dry/crumbly, add a quick drizzle of olive oil to help bind it together. 
  4. Use your hands to shape the mixture into patties – it should make about 6 - 3 inch burgers.
  5. Bake the veggie burgers for 18-20 minutes, flipping once at the halfway point. Remove from oven and allow to cool.

Notes

I made a quick chipotle mayo for these burgers: Mix together ¼ cup vegan mayo and 1 tablespoon of sriracha. That's it! 

For topping, I used red onion, spicy sprouts, and avocado.

    Do you use hulled sunflower seeds, or do you grind up the shell and all in the food processor? I have a giant batch of sunflower seeds still in the hull and no idea what to do with them, because I'm sure not going to spend the time to crack each one open, haha -- I'm on a quest for a recipe that uses the shell too!
