2-Ingredient Roasted Tomato Dip

The tomatoes were starting to go bad. The juicy, bright red and orange and gold tomatoes that we worked so hard to grow. From seeds to seedlings to fruit, they required a lot of time and TLC. How could we let them go to waste? No, sir. Not in my house.  Time for some Roasted tomato dip time!

We've eaten our fill of them on salads and sliced up plenty to eat as snacks over the past few months. So, into the oven they went. As much as I love fresh tomatoes, something incredible happens when they're roasted. Their flavor becomes intensely concentrated and their texture goes from juicy to jammy. Sweet, savory, and tart = party in my mouth.

But wait. There's still one more ingredient we need to talk about. Creamy, tangy goat cheese plus these flavorful tomatoes makes this a party for two.

Ingredients

Scale
  • 5-6 medium tomatoes
  • 4 oz goat cheese (chèvre)
  • a pinch of sea salt

Instructions

  1. Preheat oven to 350º.
  2. Spray a baking sheet with oil. Place the tomatoes on the pan and roast for 40 minutes or until tender.
  3. Add tomatoes to a blender and pulse until liquified. Add goat cheese and salt. Pulse again until combined and creamy.
  4. If the dip is too liquid, add more goat cheese to reach desired consistency.

    Haha, I did that exact same post on Facebook ('and then there were three...') when we got our pup! So much fun being ambiguous But the addition of Scout to your family is AWESOME news! Congrats you guys! She's beautiful and I know it's gonna be heaps of fun seeing her learn, grow and bond as a member of your family. She's certainly gonna be well fed! As for this gorgeous dip? Yum. I am a massive fan of simple recipes that let the key ingredient (in this case, your homegrown tomatoes) shine. Definitely a keeper!

      Hi Laura –

      I couldn't resist teasing people! Hehe! We are really so happy to have her – she has been so good for us and we are enjoying teaching her new things. After we had to put my childhood pup to sleep last summer, I didn't know if I ever wanted another pet. But then Scout fell into our lap! <3 Thank you for the sweet comment!
