I can honestly say that I never even thought of using broccoli slaw in a meal until a few weeks ago. It was one of those nights where the fridge looks like a "Chopped" basket and you just stand there like "wtf am I supposed to do with this?" As it turns out, I was supposed to make this freakin' awesome stir fry and share it with you lovely people. 💁♀️ Sometimes the best meals happen when you least expect it!

There's very little prep – just roast the chicken and mix the sauce and you're ready to roll. If you start cooking the broccoli slaw while the chicken is in the oven, you can actually make this recipe in about 20 minutes.
Speaking of sauce, let's just talk about this sauce for a minute. It's not your typical Teriyaki or sweet-and-sticky stir fry sauce. It's better. It reminds me a little bit of Thai peanut sauce – it has a nut butter base, bright hints of lime and ginger, a splash of spice, and a hint of sweetness. Pro tip: save a little bit so you can drizzle it on top of your bowl when you're ready to eat. 😉 You can thank me later.
