This broccoli slaw and chicken stir fry recipe is the easiest dinner EVER! Minimal prep, less than 30 minutes of cooking time, and quick cleanup. It's great for meal prep too!

You read that right – broccoli slaw. For dinner. Stir fry style. And people, it is GOOOOOOOOD.

All my life, I just thought broccoli slaw was something people used to make those weird-looking-but-tasty salads that you see at cookouts. But I was wrong. It's also the most genius base for a fast and easy stir fry!

I can honestly say that I never even thought of using broccoli slaw in a meal until a few weeks ago. It was one of those nights where the fridge looks like a "Chopped" basket and you just stand there like "wtf am I supposed to do with this?" As it turns out, I was supposed to make this freakin' awesome stir fry and share it with you lovely people. 💁‍♀️ Sometimes the best meals happen when you least expect it!

Broccoli Slaw Chicken Stir Fry with Chopsticks and Lime

All in all, this broccoli slaw and chicken stir fry comes together in under 30 minutes. Dinner. On the table. In under 30 minutes. There's very little prep – just roast the chicken and mix the sauce and you're ready to roll. If you start cooking the broccoli slaw while the chicken is in the oven, you can actually make this recipe in about 20 minutes.

Speaking of sauce, let's just talk about this sauce for a minute. It's not your typical Teriyaki or sweet-and-sticky stir fry sauce. It's better. It reminds me a little bit of Thai peanut sauce – it has a nut butter base, bright hints of lime and ginger, a splash of spice, and a hint of sweetness. Pro tip: save a little bit so you can drizzle it on top of your bowl when you're ready to eat. 😉 You can thank me later.

Description

This broccoli slaw and chicken stir fry recipe is the easiest dinner EVER! Minimal prep, less than 30 minutes of cooking time, and quick cleanup. It's great for meal prep too!


Ingredients

FOR THE STIR FRY

  • 1 package of broccoli slaw
  • 1 lb. chicken breast
  • 2 c. shelled edamame, thawed
  • 2-3 Tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper

FOR THE SAUCE

  • 3 Tablespoons warm water
  • 3 Tablespoons lime juice
  • 3 Tablespoons olive oil or avocado oil
  • 2 ½ Tablespoons almond butter
  • 2 Tablespoons honey
  • 2 Tablespoons tamari
  • ½ Tablespoon sriracha
  • ½ teaspoon red pepper flakes
  • ¼ t ginger powder
  • ¼ t. Cornstarch

Instructions

  1. Preheat the oven to 375º and line a baking sheet with foil. Lightly grease the foil. Cut chicken breasts in half and place on the baking sheet. Season both sides with salt and pepper – about ½ teaspoon of each in total. Place into the oven and bake for 6-8 minutes. Flip the chicken and return to the oven for another 6-8 minutes. My chicken breasts were on the smaller side so they cooked relatively quickly.
  2. Once the chicken is done cooking, roughly shred it and set aside.
  3. Add all of the ingredients for the sauce into a mason jar and shake until it's smooth and combined. You can also add everything to a bowl and whisk to combine if you prefer.
  4. In a large skillet, bring 2 Tablespoons of oil to medium heat. Add broccoli slaw to the skillet and toss to coat with oil. Cook for 10-12 minutes, tossing every few minutes. 
  5. Add edamame, chicken, and sauce and toss to combine. (I recommend saving back 2-ish Tablespoons of sauce to add once your meal is plated!)
  6. Serve and enjoy!

    Yum! This is such a great idea for weeknight dinner. That sauce sounds like the perfect nutty, savory, combo. The idea of adding cornstarch is great! I wouldn't have thought of adding a thickener but it adds so much to the texture!
