These jerk cauliflower tacos are here to change the game. We're criss-crossing Jamaican with Mexican to create a special kind of spicy fusion taco situation that you're gonna L.O.V.E.

What is jerk seasoning?

I thought maybe I should start here for this post. Have you ever had jerk-flavored food before? Ever heard of it? If you've tried it before, it's probably safe for me to assume that you loved it. And if you haven't tried it, you're going to love it. (As long as you like spicy food.)

Jerk seasoning is a cornerstone of Jamaican cooking, but it is believed to have originated in Africa. It involves blending a number of key spices to create a dry rub, which is typically used to marinate meat. Today, we're using cauliflower. Because, as we all know, cauliflower is that magic veggie that we can use to create rice, or to lighten up pizza crust, or to swap for meat in sliders. See? Magic.

Homemade Jerk Seasoning
You could totally buy pre-made jerk seasoning at the store. I wouldn't blame you one bit for simplifying. BUT – just let me say, I highly recommend using the recipe provided to make your own seasoning. I created it specifically for the cauliflower and I tested it until it was just right. Slow building heat, layers on layers on layers of flavor, and the slightest hint of sweetness from a dash of sugar (which also helps the cauliflower crisp up!).

You will not stop at one jerk cauliflower taco. You will not stop at two tacos. You may in fact eat ALL. THE. TACOS. But if you don't, just keep in mind that this recipe is absolutely perfect for meal prep.

Make a big batch of the jerk cauliflower and the possibilities are endless. Pack it into rice bowls. Toss it into a salad with your favorite veggies. Wrap it into a tortilla with all of the fixings for a lunch burrito.

Description

Ingredients

Scale
  • 4 cups cauliflower florets
  • 3 Tablespoons olive oil

Jerk Seasoning

  • 1 teaspoon sea salt
  • ½ teaspoon brown sugar
  • ½ teaspoon garlic powder
  • ½ teaspoon ginger powder
  • ½ teaspoon white pepper
  • ½ teaspoon allspice
  • ¼ teaspoon oregano
  • ¼ teaspoon cinnamon
  • ¼ teaspoon red pepper flakes
  • ⅛ teaspoon ground cloves
  • ⅛ teaspoon cayenne

For the Tacos

  • Tortillas (or hard taco shells!)
  • Avocado
  • Red onion
  • Jalapeño
  • Diced mango

Instructions

  1. Preheat oven to 375º. Line a large baking sheet with parchment.
  2. Combine jerk seasoning ingredients in a small bowl and stir until mixed well.
  3. Add cauliflower to a large bowl. Pour in oil and add seasoning blend. Mix until well-coated.
  4. OR – Pro tip! Combine seasoning ingredients in a gallon Ziplock bag. Shake to mix. Add cauliflower and oil and shake to coat well.
  5. Spread cauliflower onto the baking sheet and place in oven. Bake for 20-22 minutes, until cauliflower is tender.

Taco Time!

  1. Heat tortillas or taco shells.
  2. Fill with jerk cauliflower.
  3. Top with all of your favorite taco toppings. And most definitely a squeeze of fresh lime.
  4. Enjoy!

Notes

You could also grill this cauliflower, if desired!
Place a sheet of heavy duty foil or a foil pan on the grate.
Heat grill to medium and drizzle high heat oil over the foil.
Spread cauliflower onto foil and cook 15-20 minutes, flipping occasionally, until tender.
