Chicken and Apple Sausage Breakfast Melts

Waaaaaaaaay back when we were in college. Back when we started this little blog. In a funky upstairs apartment in a house two blocks away from the football stadium. We started making food for our friends. That’s how and why The Fitchen exists. We loved to cook for the people we loved.

Sometimes it was tacos. Sometimes we would grill out. Sometimes we made them eat tofu because it’s not as bad as people think it is. Sometimes it was my mom’s lasagna recipe. And once – this was my favorite time – we got to make breakfast.

Here’s how it went down:

At Purdue, there is a tradition called “Breakfast Club." Whenever there's a home football game, Boilermakers wake up before dawn, dress up in costumes of their choosing, and make their way to the bars. There, they converge with a multitude of like-minded, party-dedicated college students to enjoy cheap screwdrivers, beer, and other questionable libations.

Clark and I aren’t morning people. And we don’t care much about sports. But day-drinking is something we can get behind. So one Saturday during our senior year, our friends finally convinced us to go to Breakfast Club.

I only agreed to go because I knew there would be actual breakfast happening afterwards (and I may or may not be a fan of screwdrivers.) We partied until the game started and made the journey back to our apartment where the real fun started. We sauteed onions while browning up apple-chicken sausage, made avocado toast, scrambled about a dozen eggs and mixed in some goat cheese for good measure. 😍😍😍 Breakfast magic.

So we’ve been fans of Aidells® sausages for years, literally years. Ever since that one morning at Purdue. That’s why we were stoked when they reached out to us. This is a brand that we cook with on a regular basis because they use simple, real ingredients and leave out the bogus stuff like artificial flavorings, nitrites, gluten, or hormones. I like to be able to pronounce what I’m eating.

For this partnership, we got to choose which variety of Aidells® sausage links to use AND what kind of recipe to make. They have 18(!!!!!!) sausage flavors with ingredients like sweet basil, jalapeño, roasted garlic, sun-dried tomato and more. I went to Meijer and stared at the options. I thought really hard about what to make – and then I remembered that breakfast. Inspired by that breakfast, we combined all of the elements – cheesy, crunchy, sweet, and savory – into one melty, heavenly grilled breakfast sandwich. The star of which? Aidells® smoked chicken sausage with real, hand-picked apples in it. 

I don’t know how close you live to the nearest Meijer store, but I hope it’s not far. Because A) they carry Aidells®. B) they have an incredible selection of organic dry goods AND produce. Chicken and Apple Sausage Breakfast Melts

Ingredients

Scale
  • 1 - 12 oz. package Aidells® Chicken Apple Sausage
  • 1 sweet onion
  • 1 granny smith apple
  • ¼ cup of grapeseed oil, divided
  • ¼ teaspoon cinnamon
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 8 slices of bread
  • 8 slices of havarti
  • 2 oz. chevre goat cheese
  • 2 cups arugula

Instructions

Prep

  1. Slice sausage links into ⅓ inch rounds.
  2. Thinly slice onion and apple.
  3. In a nonstick or cast iron skillet, bring 2 tablespoons of oil to medium heat. Add onion and apples and sprinkle in cinnamon, salt, and pepper. Sauté 4-5 minutes, then add sausage rounds. Continue cooking for 5 minutes, then remove the skillet from the heat. Empty the skillet and set the sautéed ingredients aside.

Sandwiches

  1. Spread a thin, even layer of mayonnaise on one side of each slice of bread.
  2. Using the same skillet, bring 2 tablespoons of oil to medium heat. Place bread mayonnaise side down.
  3. Add 1 slice of havarti, then spoon the desired amount of sausage/onion/apple mixture over top. Sprinkle chunks of goat cheese, then add arugula, followed by 1 more slice of havarti. Top with the other slice of bread, mayonnaise side facing up. Cook 2-5 minutes, checking the bottom slice occasionally to prevent burning.
  4. Flip the sandwich and cover the pan – we used a lid from a larger pot, as our skillet doesn't have a lid. This helps the cheese to melt more quickly. Cook 2-5 more minutes until the bread is golden brown.
  5. Slice and enjoy!
