You know how I said we were going camping this weekend? I was wrong. Life had other, better plans. One of our good friends decided to pass through Colorado Springs on her way to New Mexico. She's been in Hawaii for the past two months, so we didn't get to see her before moving. She originally planned on staying one night, but she liked it enough to stay another night. We talked, laughed, enjoyed meals, and explored the city.
I have serious respect for this girl – she drove all the way across the country by herself. Personally, I have a hard time staying awake while I have a passenger in the car with me, let alone if it's just me driving. She's been blessed with the most beautiful voice and she's working to make singing her profession. While she was here, we convinced her to set up in the park with her guitar and sing for whoever would listen. I've walked by plenty of people doing the same thing – sharing their music, baring their souls. But to watch someone that you know doing it? Wow. It gave me a dose of perspective.
Some people stopped to listen. Some complimented her. Some laughed. Some ignored and avoided eye contact. Some even tossed money into her guitar case. No one, besides Clark and I, knew her story. We were the only ones who knew that she was singing just to put herself out there and see how people responded. Like I said, I have a lot of respect for this one.
Now... if we can only convince her to make a YouTube channel and get her music out into the world! All in favor? 🙋🙋🙋 I posted a bit of her singing to SnapChat – which should still be on my story, so add me and watch it!
Even if we didn't spend it outdoors like we expected, our weekend was super relaxing and refreshing. I stayed away from the computer (except for one late-night episode of Game of Thrones) and we didn't make any recipes (we already had this one ready to go!)
Anyway, it's Sunday now and I'm keeping things simple with this recipe. I've been trying to find more ways to incorporate turmeric into our food lately and this is one of the best ideas yet. Along with those turmeric roasted potatoes I shared a couple of weeks ago. 😋 I'll take any excuse to squeeze in a serving of this magical golden root.

Ingredients
- 2 cups of mango, preferably fresh
- 2 cups spinach or other greens
- 1 cup regular coconut milk (carton, not canned)
- 1 Tablespoon ground turmeric
Instructions
