As far as summertime beverages are concerned, fresh lemonade is great. Fresh lemonade with rum? Great doesn’t begin to cover it. Last weekend we received a package from home with a bottle of Tortuga Gold Rum straight from Grand Cayman. The concocting began immediately.
Begin by making the lemonade. Add lemon juice, water, and sugar to a jar and shake to combine. This lemonade is not on the sweet side and we made it that way for a reason. We wanted to taste the rum without being distracted by an overly sweet lemonade flavor. If you prefer a sweeter drink, simply add more sugar to taste and shake until it is dissolved.
On a small plate or in a bowl, spread a layer of cane sugar. Wet the rim of the jar and dip it into the sugar.
Pour 2 shots of rum to the Mason jar, then a hefty portion of ice. Add 4 oz. of lemonade.
Toss 3-4 thin lemon slices into the jar and top it all off with champagne.
We garnished with a sexy sprig of mint - optional, but why not?
Sit back, sip, and enjoy. What summer heat?
I regret to inform you that the drink does not come with Grand Cayman beach views or breezes. About halfway through your second glass though, it doesn’t seem to matter so much. That is arguably rum’s best attribute. After all, island is really just a state of mind.

For Cocktail

- 2 oz. champagne

- 24 oz. water
- juice of 2 lemons [2-3 Tbsp.]
- 2 Tbsp. cane sugar
