 The Best Guacamole on Earth

Cinco de Mayo is this weekend and we figured we wouldn't be much of a food blog if we didn't honor this sacred holiday. We also figured it was finally time to share Clark's guacamole recipe. A lot of people claim that they make the world's best guacamole, but Clark's guacamole is so good that it made a cameo in our wedding vows. Trust us - it's that good.

If you're looking for some other Cinco de Mayo-worthy recipes, we have your back. Check out our Raw Chard Burritos,  Vegan Tacos, Fish Taco Inspired Tofu Tacos, and Stuffed Red Bell Peppers.

Ingredients

2 ripe avocados, mashed
1 vine ripe tomato, diced
1 medium garlic clove, minced
½ white onion, diced
juice of ½ lime
½ t. sea salt
½ t. fresh ground black pepper
⅛ t. cayenne pepper

Recipe

We're keeping this one simple and straightforward. After all, there are margaritas waiting to be drunk. Use a fork to mash the avocado in a bowl. Prepare the other ingredients as suggested above and then combine everything in the bowl.

Mix it all together and get to enjoying it. Best served with tequila.

I like to use a purple onion, and I like to add a few drops of Bloody Mary Seasoning

Purple onion is a great variation! Never heard of adding Bloody Mary Seasoning, but that sounds quite tasty. :)
